Quiche Fribourg-Style Recipe

Ingredients
- 400 g pie crust
- 150 g gruyère cheese
- 140 g Vacherin Fribourgeois cheese
- 25 g butter
- 100 g lardons or bacon strips
- 3 eggs
- 1 Tbsp. flour
- 300 ml cream
- nutmeg, salt and pepper
Method
- Roll out the pastry and line a buttered quiche mold. Prick the base with a fork.
- Grate the cheeses into a bowl.
- Fry the bacon pieces, cool and sprinkle into the pie shell.
- Beat the eggs with the cheese, cream and flour, using a fork until thoroughly combined. Season lightly with salt, pepper and nutmeg.
- Pour the mixture over the bacon.
Baking
- Preheat the oven to 220 °C. / 450 °F. Bake the quiche at this temperature for 10 minutes, then reduce the oven temperature to 150 °C. / 300 °F and bake 10-20 minutes longer.
The quiche is done once the custard mixture (eggs and cream) is set.
