Raclette with Snow Peas, Grapefruit and Scallops Recipe

Ingredients
Ingredients for 8 servings
- 250 g (9 oz.) String Beans, trimmed
- 8 Scallops
- 8 skinless Grapefruit segments
- 8 blades of chive
- 2 tsp. pink peppercorns, lightly crushed
- 200-250 g (7-9 oz.) Swiss Raclette cheese, sliced
- Salt
Method
- Cook the snow peas in boiling salted water for about 5 minutes, being careful to keep them crisp. Discard the cooking water and immerse the snow peas in ice water. Drain well.
- Separate the grapefruit sections and prepare eight "suprêmes" by removing the skin covering each section.
- Divide the snow peas among individual raclette casseroles, add the scallops, the grapefruit sections and the crushed pink peppercorns; cover with raclette cheese and place in the oven until melted.
