Raclette with Snow Peas, Grapefruit and Scallops

Ingredients
Ingredients for 8 servings
- 250 g (9 oz.) String Beans, trimmed
- 8 Scallops
- 8 skinless Grapefruit segments
- 8 blades of chive
- 2 tsp. pink peppercorns, lightly crushed
- 200-250 g (7-9 oz.) Swiss Raclette cheese, sliced
- Salt
Method
  1. Cook the snow peas in boiling salted water for about 5 minutes, being careful to keep them crisp. Discard the cooking water and immerse the snow peas in ice water. Drain well.
  2. Separate the grapefruit sections and prepare eight "suprêmes" by removing the skin covering each section.
  3. Divide the snow peas among individual raclette casseroles, add the scallops, the grapefruit sections and the crushed pink peppercorns; cover with raclette cheese and place in the oven until melted.
