Red Pepper Mayonnaise Recipe

This sauce is excellent with a smoked chicken salad.
Ingredients
- 150 g (5 oz.) fat-free, salt-free mayonnaise
- 50 g (2 oz.) red Sweet Pepper or Bell Pepper purée
- 30 g (1 oz.) flat-leaf parsley
Method
- Roast the peppers on a grill or in the oven until they are tender;
- remove the skins;
- purée in a food processor or blender with the mayonnaise;
- add the finely chopped flat-leaf parsley.
