Chef's Note
Rillettes are meat (pork in this case) that has been seasoned, slowly cooked in its fat, pounded and packed into ramekins. The cooking fat gives the rillettes a very creamy texture.

Method
- Remove the stem ends and the tough outer leaves from the endives, keeping only the tender inner leaves.
- Place a small spoonful of rillettes into the hollow of each leaf. Sprinkle lightly with paprika.
