Chef's Note

Rillettes are meat (pork in this case) that has been seasoned, slowly cooked in its fat, pounded and packed into ramekins. The cooking fat gives the rillettes a very creamy texture.

Ingredients
For 6 servings

- 1 container of pork rillettes
- 4 medium Belgian endives
- A pinch of paprika
Method
  1. Remove the stem ends and the tough outer leaves from the endives, keeping only the tender inner leaves.
  2. Place a small spoonful of rillettes into the hollow of each leaf. Sprinkle lightly with paprika.
