Salt Herbs Recipe
Chef's Note
Salt herbs, or herbes salées, are a seasoning blend found in Quebec's Charlevoix region, used to flavor soups and stews.
They will keep well throughout the winter and bring a note of summer to cold-weather dishes.

Ingredients
- Chive, savory, parsley
- Grated carrot
- Celery leaves
- Minced onion
- 2 tbsp. cold water
- Coarse salt
Method
- finely chop all the ingredients in equal quantities;
- place into jars, alternating each 2 cm (3/4") layer with coarse salt;
- add water; cover; let sit for a few days before using.
