Schwobe Broedel - Alsatian Doughnuts Recipe
Chef's Note
These are not doughnuts properly speaking, since instead of being deep-fried they are baked on a cookie sheet.
Ingredients
- 450 g (1 lb.) all-purpose flour
- 450 g (1 lb.) sugar
- 2 beaten egg yolks
- 315 g (11 oz.) butter
- 225 (8 oz.) ground blanched almonds
- Rose water
- Zest of 1 lemon
- A pinch of cinnamon
Method
- Combine all the ingredients except the eggs;
- roll the dough out on a floured work surface to a 5 mm (1/4") thick; cut out shapes with cutters;
- brush with egg yolk;
- bake in a fairly hot oven until done; test as you would a cake.
