She Crab Soup

Chef's Note
You can add the sherry just before serving, or provide your guests with a small glass of sherry so they can add their own.
Ingredients for 4 servings
- 500 ml (2 cups) fresh Crab meat, with the roe (optional. but adds flavor)
- 5 drops of onion juice
- Salt and pepper
- 1 tsp. mace
- 250 ml (1 cup) unsweetened whipped cream
- 2 tbsp. butter
- 1 liter (4 cups) milk
- Grated lemon zest
- 2 tbsp. flour
- Dry sherry
- Salt and pepper
  1. melt the butter in a large saucepan; melt the butter, add the flour and whisk in the milk; 
  2. add all the remaining ingredients except the sherry;
  3. simmer over low heat for 20 minutes;
  4. serve in hot bowls; to each bowl add 1 tsp. sherry and 1 tbsp. whipped cream.
