Chilled Shrimp Skewers with Orange Marmalade

- 1 kg (2 1/4 lb.) large fresh Shrimps
- 18 pieces of lemon
- 125 ml (1/2 cup) orange marmalade
- 60 ml (1/4 cup) miel
- 60 ml (1/4 cup) lemon juice
- 1 tsp. cornstarch
- 1/3 tsp. white pepper
  1. Peel and clean the shrimps;
  2. place 3 shrimps on each skewer, piercing them through the head and tail so they stay in place, alternating them with pieces of lemon;
  3. in a small bowl, melt the marmalade over low heat with the other ingredients; remove from the heat once the mixture starts to thicken;
  4. brush the mixture over the shrimp and grill just until cooked: better undercooked than overcooked!
