Smoked Salmon Quiche Recipe

If you're watching your calorie or carb intake, you can make the "quiche" without pastry. It's still delicious.
Ingredients
Ingredients for 4 servings
- Pie pastry for a single crust (pâte brisée)
- 200 g (7 oz.) Smoked salmon, cut into thin strips
- 5 Eggs
- 250 ml (1 cup) heavy cream (35%)
- 250 ml (1 cup) grated mozzarella cheese
Method
Making the crust
- roll the pastry out with a rolling pin and line a quiche or pie plate;
- cover with aluminum foil and a cup of dry beans; bake in a hot (240ºC. (500º F.) oven for 5 minutes; remove the beans and foil; bake 5 minutes longer; remove from the oven and reduce the oven temperature to 180ºC. (350º F.) for the quiche.
Preparing and cooking the quiche
- whisk together the cream and eggs; add the cheese and smoked salmon;
- pour the mixture into the crust; bake at 180ºC. (350º F.) for 20 minutes; serve hot.
