Soy Beans with Bamboo Shoots Recipe

Ingredients
Ingredients for 4 servings
- 400 g (14 oz.) fresh or dried Soy or Soya beans
- 1 small can of Bamboo shoots shoots
- 1 tbsp. brown sugar
- 1 tsp. light Soy Sauce or Soya Sauce
- 1 tsp. dark soy sauce
- 1 star anise
- 3 small pieces of ginger
- 250 ml (1 cup) water
- 2 shallots
- 1 tsp. sesame oil
Method
- soak the beans in cold water for 2 hours;
- drain; cook in 400 ml (1 1/2 cups) water until tender;
- drain, reserving the water; rinse in cold water and rub to remove the outer membranes;
- slice the bamboo shoots thinly;
- place all the ingredients except the oil into a saucepan; pour the cooking water on top;
- bring the liquid to a boil; cover, reduce the heat to low and simmer for 30 minutes;
- sprinkle everything with a few drops of sesame oil;
- serve hot or cold.
