Summer Vegetable Tian Recipe

Chef's Note
This recipe was designed to showcase a variety of frozen foods available on the market (vegetables, garlic), but you could combine both fresh and frozen ingredients depending on the season and availability.
This vegetable tian is a perfect accompaniment to the Marinated Fish Skewers
Ingredients
Ingredients for 6 servings
- 500 g (18 oz.) frozen sliced Zucchini
- 500 g (18 oz.) fresh Tomatoes, sliced
- 6 tbsp. olive oil
- 20 g (4 tsp.) frozen chopped garlic
- Frozen onions
- Salt and pepper
Method
- Thaw the zucchini rounds and drain them well.
- Preheat the oven to 210° C (425° F).
- Cook the thinly sliced onion for about 20 minutes over low heat until translucent.
- Generously oil a gratin dish. Spread the garlic over the bottom of the dish and evenly spread the cooked onions over top.
- Alternate layers of tomato and zucchini.
- Season with salt and pepper. Drizzle with 6 tbsp. olive oil.
- Bake for 50-60 minutes, pressing the vegetables down occasionally with the back of a skimmer or slotted spoon.
