Sweet and Sour Fruit and Vegetable Jam

At L'Âtre on the Île d'Orléans, the traditional tourtière is served as a first course with this sweet and sour fruit and vegetable jam… a recipe from my English heritage

The jam should simmer for quite a long time, though the fruits and vegetables should stay slightly crisp.

- 1 stalk of celery
- 3 onions
- 3 bell peppers
- 3 peaches
- 3 pears
- 3 tomatoes
- 3 apples
- 250 ml (1 cup) cider vinegar
- 250 ml (1 cup) sugar
- A small cheesecloth bundle of pickling spice
  1. Peel the fruit; chop all the vegetables and fruit into small pieces;
  2. bring all the ingredients to a boil in a large pot;
  3. let simmer over low heat until slightly thickened;
  4. immediately place into hot sterilized jars or refrigerate.
