Sweet pastry or Pâte sucrée Recipe

Ingredients for 35 7-8 cm tarts
- 450 g (1 lb.) flour
- 270 g (1 c. + 3 tbsp.) softened butter
- 3 eggs
- 15 ml (1 tbsp.) water
- 225 g (8 oz.) sugar
  1. Mix together the flour and the butter;
  2. add the sugar;
  3. add in the eggs and the water;
  4. roll out the pastry and line the tart molds;
  5. place in a moderate oven; remove from the oven once they begin to brown;
  6. fill as desired: with chocolate, pastry cream, lemon curd, etc.
