Tabbouleh Canapés

Ingredients
Ingredients for 24 pieces
- 300 ml (1 1/4 cups) water
- Salt
- 225 g (8 oz.) couscous
- 20 g (4 tsp.) butter
- 50 g (2 oz.) onion
- 25 g (1 oz.) lovage
- 150 g (5 oz.) red pepper
- 60 ml (1/4 cup) lemon juice
- 40 ml (3 tbsp.) vinegar
- 120 ml (1/2 cup) oil
- 4 herb or milk buns
- 150 g (5 oz.) shrimp
Method
  1. Bring the salted water to a boil; sprinkle over the couscous; add the butter and let cool;
  2. finely chop the onion and lovage. Seed and dice the pepper; add to the couscous with the lemon juice, oil and vinegar. Mix well.
  3. Slice the buns, divide the tabbouleh among them and garnish with shrimp.
