Tagliatelle Carbonara with Lamb's Lettuce Recipe

Ingredients
For 4 servings
- 1 basket of Mache (Lamb's Lettuce) - 150 g / 5 oz.
- 250 g (9 oz.) tagliatelle (see: Pasta)
- 2 tbsp. crème fraîche
- 1 egg
- 100 g (3 1/2 oz.) bacon, in small pieces
- Salt and pepper
Method
- Cook the tagliatelle in boiling salted water.
- Brown the bacon pieces in a skillet; drain on paper towels.
- Finely chop the lamb's lettuce (reserving 4 bunches for garnish) and sauté for 10 minutes in a saucepan over low heat.
- Add the crème fraîche, bacon and tagliatelle.
- Just before serving, add a raw egg to the pasta and mix vigorously.
- Serve the tagliatelle garnished with the reserved raw lamb's lettuce.
