Sunday breakfast isn’t truly complete without a big plate of Firi firi on the table… because stopping at just one is nearly impossible. Coconut water gives them their delicate aroma, and coconut milk makes them irresistibly soft—an essential indulgence in Polynesian morning rituals.
These figure-eight-shaped donuts are much more than a treat — they’re a family ritual, a tradition passed down through generations. Their twisted shape symbolizes the bond between family members: simple, strong, and warm.
Tips & Tricks
(1) Some Polynesian women let the dough rise overnight in the fridge by placing it in a freezer bag.
Step 1
In a glass or measuring cup, dissolve the yeast in warm water.
Step 2
In a mixing bowl, combine flour, salt, dissolved yeast, and sugar.
Knead vigorously while gradually adding the coconut milk—the dough should be slightly moist.
Step 3
Cover with a kitchen towel and let rise until the dough doubles in size. Allow about 2 hours at room temperature or 3 hours in the fridge.
Step 4
Divide the dough into 20 portions, dusting each with flour as you go. Shape into balls.
Using the end of a wooden spoon handle, poke a hole in the center. Rotate the handle to gradually widen the hole until you get a long, thin oval.
Twist the ring of dough in the center to form a figure eight.
Step 5
Fry the donuts in hot oil, turning halfway through (2–3 minutes per side). Drain and place on paper towels.
Finishing Touch (Optional)
Place 3 to 4 tablespoons of sugar in a plastic bag. Add the hot donuts, seal the bag with a knot, and shake well to coat them evenly with sugar. Serve immediately.
