Tropical Mini Pitas Recipe

Chef's Note
Use mini pitas. When halved, they can be filled with just about anything. These little bites are easy to hold and less caloric than bread.
Ingredients
For 12 pieces
- 4 slices of old-fashioned smoked ham
- 45 ml (3 tbsp.) small pineapple cubes, well drained
- 4 lettuce leaves
- 60 ml (4 tbsp.) spreadable cream cheese
- 6 mini pitas
Method
- Spread the cream cheese over the ham slices; top each with a lettuce leaf and some diced pineapple.
- Roll up and slice each roll into three spirals of equal size.
- Cut the mini pitas in half and open up each pocket.
- Place a ham roll into each of the twelve pockets. Wrap in plastic wrap.
- Accompany with orange juice and a bunch of grapes for a delicious healthy lunch!
