Tunisian Lemonade

Chef's Note

The quantity of concentrate and sugar is a matter of preference.

- 3-4 fresh untreated lemons
- powdered sugar
- fresh mint
- boiling water
  1. Wash the lemons well.
  2. Remove a small part of the zest.
  3. Cut the lemons into large wedges and remove the seeds; immerse the lemon wedges for about 20 minutes in a saucepan of boiling water.
  4. Let cool, then liquefy in a blender.
  5. Strain the mixture.
  6. Store the lemon concentrate in a glass container in the fridge.
  7. Serve by mixing some concentrate with water, sugar and a few mint leaves. If the water is not very cold, add one or two ice cubes.
