For 4 servings

- 4 potions of fromage frais (100 g) or other fresh cheese
- 3 egg yolks
- 100 ml (6 tbsp.) milk
- 300 ml (1 1/4 cups) light cream
- 4 tsp. powdered sugar
- 1/2 vanilla bean
  1. Combine the sugar, egg yolks and seeds scraped from the vanilla bean; blend in the fromage frais, cream and milk. Whisk until smooth.
  2. Pour into 4 small heat-proof jars or ramekins and cook in a water bath at 120° C (240° F) for 30 minutes.
  3. Refrigerate until ready to serve. They are best served the same day.
