Veal Burger with Two Cheeses Recipe

Serve the burgers with French fries.
Ingredients
For 4 servings
- 600 g (1 lb. 5 oz.) ground veal
- 2 eggs
- 100 g (3 1/2 oz.) arugula
- 1 large tomato
- 4 lettuce leaves
- 4 burger buns
- 6 Tbsp. liquid honey
- 4 slices of mimolette cheese
- 80 g (3 oz.) grated Parmesan
- 2 tsp. mild mustard
- 2 Tbsp. olive oil
- 1 Tbsp. sunflower oil
- salt and pepper
Method
- Combine the ground veal with the honey and Parmesan; mix in the eggs, salt and pepper. Divide the meat into 4 portions and form into 10 cm (4") patties.
- Slice the tomato into 4 thick slices, wash the lettuce and arugula leaves and toss the arugula with the olive oil.
- Brown the burgers in sunflower oil in a large skillet over high heat, then reduce the heat to medium and cook for 2-3 minutes longer on each side.
- Toast the buns, spread with mustard and top with a lettuce leaf, burger, arugula, a slice of mimolette and a slice of tomato.
