Waffles Recipe

Chef's Note
Waffles can be eaten plain, dusted with sugar or topped with jam for breakfast.
Garnished with fresh fruit and whipped cream, they become a dessert.
They can also be served with chocolate sauce and a scoop of vanilla ice cream, or a syrup. In short, waffles are versatile and lend themselves to all sorts of presentations!
Ingredients
- 250 g (1 cup) sugar
- 200 g (3/4 cup) melted butter
- 500 g (18 oz.) flour
- 20 g (2/3 oz.) yeast
- 100 + 100 ml (6 + 6 tbsp.) milk
- 3 egg yolks
- A pinch of salt
Method
- In a bowl, combine the flour and the yeast dissolved in 100 ml (6 tbsp.) milk; let rise at room temperature away from drafts;
- add the butter, sugar, 100 ml (6 tbsp.) milk, salt and eggs; mix and let rest overnight in the refrigerator;
- ladle 30 g (1 oz.) of batter into a waffle iron; cook until golden brown.
