Walnut Butter to serve with grilled capon Recipe

You can use this walnut butter on its own, or slide pieces of it under the skin when roasting a capon to flavor and baste the meat.
- 200 g (7 oz.) Butter
- 100 g (3 1/2 oz.) Nut halves
- 1 tbsp. Dijon mustard
- 20 ml (4 tsp.) armagnac
- Salt and pepper
- Chop the walnut halves.
- Combine the walnuts with the softened butter, mustard, armagnac, salt and pepper; refrigerate.
