Muffins with white chocolate chunks Recipe

Ingredients
- 375 g (12 oz.) flour
- 125 g (4 oz.) powdered sugar
- 150 g (5 oz.) Callebaut white chocolate chunks
- 10 g (1 Tbsp.) baking powder
- 45 g (1 1/2 oz.) mix of oatmeal and flaked almonds
- 30 g (1 oz.) white raisins
- 1 Tbsp. orange zest
- 2 whole eggs
- 375 ml (12 oz.) milk
- 160 g (6 oz.) butter
Garnish (optional)
- almonds
- sugar
- whipped egg whites
Method
- Mix together all the dry ingredients.
- Add the eggs and milk and mix.
- Add the butter and mix in briefly.
- Fill muffin tins with the mixture.
- Top with a mixture of almonds, sugar and egg whites.
- Bake at 210 °C / 425 °F for 25 minutes. Test for doneness: insert a skewer into the center of the muffins. It should come out dry.
