Muffins with white chocolate chunks

A recipe from Axel Sachem - Ambassador of Callebaut Chocolate, Belgium

Ingredients
- 375 g (12 oz.) flour
- 125 g (4 oz.) powdered sugar
- 150 g (5 oz.) Callebaut white chocolate chunks
- 10 g (1 Tbsp.) baking powder
- 45 g (1 1/2 oz.) mix of oatmeal and flaked almonds
- 30 g (1 oz.) white raisins
- 1 Tbsp. orange zest
- 2 whole eggs
- 375 ml (12 oz.) milk
- 160 g (6 oz.) butter

Garnish (optional)
- almonds
- sugar
- whipped egg whites
Method
  1. Mix together all the dry ingredients.
  2. Add the eggs and milk and mix.
  3. Add the butter and mix in briefly.
  4. Fill muffin tins with the mixture.
  5. Top with a mixture of almonds, sugar and egg whites.
  6. Bake at 210 °C / 425 °F for 25 minutes. Test for doneness: insert a skewer into the center of the muffins. It should come out dry.
