Yorkshire Parkin - Ginger cake

- 4 oz (1/2 cup) soft brown sugar
- 8 oz (about 2 cups) plain flour
- 4 oz (1/2 cup) butter
- 8 oz (2 1/2 cups) medium oatmeal
- 8 oz (1 cup) syrup
- 1 teaspoon ground ginger
- 1 egg
- ½ teaspoon bicarbonate of soda
- 1/4 GB pint (10 tbsp.) milk
  1. Melt the sugar, butter and syrup over low heat.
  2. Beat the egg well and, off the heat, add to the syrup mix with some of the milk.
  3. Combine the flour, oatmeal and ginger in a bowl and pour into the syrup mix.
  4. Dissolve the bicarbonate of soda in the remaining milk and add to the rest of the mixture. Stir well, then pour into a greased tin, 11 by 9 by 2 inch.
  5. Bake until firm in a moderate oven (about 1 hour). Keep for about one week before eating.
