Zucchini and Goat Cheese Terrine with Garlic and Mint

Ingredients
Ingredients for 6 servings
- 4 small or 3 large cloves of Garlic
- 1 large or 2 small Zucchini
- 1 Chavroux-style Goat cheese, 150 g (5 oz.)
- 1 St. Moret-style fresh goat cheese, 125 g (4 oz.)
- 100 g (3 1/2 oz.) Jockey-style Fromage blanc or Baker's cheese
- A nice handful of mint leaves (2 tsp. blended)
- 2 eggs
- Salt and pepper
- 1/8 tsp. Tabasco sauce
Equipment
- A 24 cm (10'') loaf pan
Method
  1. In a bowl, mash the 2 goat cheeses coarsely with a fork. 
  2. Add the fromage blanc and mix until smooth and well-combined. 
  3. Peel the garlic, remove the germ and crush to a paste.
  4. Add the 2 beaten eggs, crushed garlic, puréed mint leaves, salt, pepper and Tabasco to the bowl. 
  5. Oil a loaf pan with a piece of paper towel. Preheat the oven to 180° C (350° F).
  6. Slice the zucchini into rounds approximately 3 mm (1/8") thick.
  7. Pour one-third of the cheese mixture into the prepared pan, then lay half the zucchini slices on top. 
  8. Pour on another third of the mixture and cover with the remaining zucchini. Finish with the remaining cheese mixture.
  9. Bake in a hot oven for 40 minutes. Check for doneness with the tip of a knife. 
  10. Cool before unmolding. Refrigerate.
