Basque cuisine is cheerful and colorful, all red as if rubbed with Espelette pepper.
Meet Pierre Oteiza, a producer and master charcutier. For more than thirty years, with other passionate farmers, he has reintroduced the local Basque black pig which was on its way to extinction.
August - Bite in a Mirabelle or Small Yellow Plum

Flavorful and thirst-quenching mirabelle plums… Enjoyed on their own or cooked in a sweet or savory recipe, as a snack or dessert, mirabelle (small yellow) plums are a delicious back-to-school treat.
