Has had its own protected designation of origin since 1976
Pont l'Evêque is a soft, washed-rind cheese. Before aging in a cave (from its 3rd to 7th week), it is first salted, then placed in a ripening room where it is turned by hand each day, then washed. In this way it obtains its delicate amber color.
