Harissa
A very hot seasoning used in North Africa to season couscous and other foods. It is generally served in a separate little dish and guests add it to their taste.
The base is dried hot chili peppers that have been soaked and mashed with a little olive oil, to which are added, depending on the cook:
- coriander
- caraway (karouya)
- garlic
- salt, etc.
