Chef's Note
A delicious bread to serve with fish.
Ingredients
Ingredients
- 400 g (14 oz.) pastry flour
- Anise or fennel seeds
- 2 packets of yeast
- 1 packet of baking powder
- Water
- A pinch of salt
Method
- Combine the pastry flour with the water, yeast, baking powder and a pinch of salt until it forms a thick dough.
- Knead the dough; when it starts to get smooth, gather it into a ball. Add a little more flour if necessary so that it doesn't stick to your fingers.
- Flatten the dough with your hand, sprinkle the anise or fennel seeds over top and knead again.
- Form into a ball once again and let rise 3 hours.
- With a sharp knife, cut a criss-cross pattern onto the surface of the bread to facilitate baking.
- Place in a very hot oven to bake for 30 minutes.
