Apple Dumplings with Banana Cream

Ingredients for 10 servings
- 800 g (1 lb. 12 oz.) wholewheat Bread
- 1 kg (2 1/4 lb.) Apples
- 175 g (7/8 cup) sugar
- Grated zest of 1 lemon
- 50 ml (3 tbsp.) lemon juice
- 750 g (3 cups) eggs
Banana cream
- 800 g (1 lb. 12 oz.) Bananas
- 350 ml (1 1/2 cups) apple juice
- 50 ml (3 tbsp.) grenadine syrup
- 50 ml (3 tbsp.) lemon juice
- Icing sugar for dusting
  1. Cut the bread into very small cubes. Peel and core the apples and dice very finely.
  2. Combine all the ingredients and form into 10 balls; wrap them tightly in plastic wrap and tie securely.
  3. Poach for 10 minutes in simmering water.
  4. For the cream: peel the bananas and purée with the other ingredients in a blender.
  5. Place a dumpling on each plate with some of the banana cream; dust with icing sugar.
