Ingredients

- 2 + 3 tbsp. powdered sugar
- 250 g (9 oz.) flour
- 500 ml (2 cups) lukewarm warm (approx.)
- 2 tbsp. melted butter
- A pinch of salt
- Oil for frying
- 2 egg whites, beaten to stiff peaks
- 4 Apples, peeled, cored, seeded and sliced in rounds
- 1 tbsp. Calvados
- Icing sugar
Method
- Combine the flour, salt, 2 tbsp. sugar and the melted butter; gently pour in some warm water to form a fairly runny batter that is not too liquid (like crepe batter); let rest for 2 hours;
- sprinkle the apple rounds with the remaining 3 tbsp. sugar; set aside;
- beat the egg whites to stiff peaks and fold into the batter just before frying;
- dip each apple round into the batter; drop into very hot oil and cook until the fritter is puffed and golden;
- remove and place on paper towels to drain; sprinkle with icing sugar and serve hot.
