Ice cream and fruit are very popular in hot countries. You can replace the banana purée to make mango, papaya, or passion fruit ice cream.
Choose very ripe fruit with a creamy texture. Avoid grainy fruits such as pears so that your ice cream will be satiny smooth.
- Heat the milk, sugar and eggs over low heat, stirring constantly until the mixture thickens;
- cool the mixture; add the fruit which has already been puréed and mixed with lime juice;
- freeze in an ice cream maker or place in the freezer for two hours, whisk for a few seconds and return to the freezer; repeat the process once or twice until nice ice cream consistancy.
