Chef's Note

Ice cream and fruit are very popular in hot countries. You can replace the banana purée to make mango, papaya, or passion fruit ice cream.

Choose very ripe fruit with a creamy texture. Avoid grainy fruits such as pears so that your ice cream will be satiny smooth.

- 1 litre (4 cups) milk
- 4 eggs
- Juice of 1 lime
- Sugar to taste
  1. Heat the milk, sugar and eggs over low heat, stirring constantly until the mixture thickens;
  2. cool the mixture; add the fruit which has already been puréed and mixed with lime juice;
  3. freeze in an ice cream maker or place in the freezer for two hours, whisk for a few seconds and return to the freezer; repeat the process once or twice until nice ice cream consistancy.
