Basic Mayonnaise Recipe

Chef's Note
This mayonnaise can be used "as is," or you can give it a personal touch:
- add a pinch of curry and serve with fried mushrooms or chicken
- blend in a little tomato paste to make a "Marie-Rose" sauce for cold shrimp
- fold in capers and some chopped dill to serve with fish, etc.
Ingredients
For 250 ml / 4 servings
- 1 egg yolk
- 1 tbsp. moutarde de Dijon
- 250 ml / 1 cup vegetable oil
- Juice of half a lemon
For 8 servings
- 500 ml vegetable oil without changing other ingredient quantities
Method
- In a bowl, mix the egg yolk and the mustard together well;
- slowly drizzle in the oil, whisking constantly, in order to achieve a smooth and creamy consistency;
- add the lemon juice (necessary to make the mayonnaise white);
- season to taste
