Chef's Note
It's best to place the whole eggs and truffles in an airtight container and leave them in the refrigerator for 1-24 hours so that the truffles' flavor penetrates the eggs.
Ingredients
Ingredients for 4 servings
- 25 g (1 oz.) Black Truffle pieces or shavings
- 8 Eggs
- 50 g (3 tbsp.) butter
- Salt and pepper
Method
- Slice the truffles thinly. Combine with the eggs.
- Macerate for a few minutes then add the truffle juice.
- Beat the eggs; season with salt and pepper.
- Cut the omelet in butter, leaving it slightly runny.
- Just before serving, top with two or three truffle slices.
