Chaussée aux Moines and Tomato Puff Pastry Tart Recipe

Ingredients
For 4 servings
- 1 roll of puff pastry
- 2 Tbsp. grainy mustard
- 3 fresh tomatoes
- 100 g Chaussée aux Moines cheese, sold sliced or in a 340 g piece
- 1 sprig of thyme
Method
- Preheat the oven to 200°C / 400°F.
- Unroll the puff pastry onto a piece of parchment placed directly on the oven rack. Brush with mustard, leaving a border all around.
- Rinse the tomatoes and pat dry. Slice fairly thinly and arrange in a rosace on the pastry.
- Cut the Chaussée aux Moines into strips (or use the slices directly) and place them on the tomatoes. Finish with crumbled thyme and a grinding of the 5 peppercorn blend.
- Bake for 15 minutes until melted and browned.
