Cherry chutney

Ingredients
- 1 tbsp. olive oil
- 60 ml / 1/4 cup chopped red onion
- 60 ml / 1/4 cup apple cider vinegar
- 250 ml / 1 cup dried cherries, coarsely chopped
- 1/2 tsp. kosher salt
- 1/4 tps. dried tarragon leaves
- 1-1/2 tbsp. honey
- 250 ml / 1 cup water
Method
  1. Heat the oil in a nonstick skillet over medium heat.
  2. Sauté the onions until they are beginning to brown.
  3. Deglaze the pan with vinegar.
  4. Add the cherries, salt, tarragon, honey, and water and simmer for 20 to 25 minutes; cool.
