Sambal Ulek Recipe

This is the basic chili paste that is used to flavor Asian, particularly Indonesian, dishes. This mixture is usually prepared in large quantity, then put in jars and refrigerated. It will keep for up to 1 month. It is sometimes mixed with shrimp paste and lime juice.
- 20 red Chilies
- 2 tsp. sea salt
- rinse the chilies; cut off the ends and chop into small pieces;
- mash the chilies with the salt in a mortar to obtain a paste;
- place into a jar.
