Fruits and vegetables are essential for maintaining good health. In fact, it’s recommended that you have five to ten servings a day. Artichokes replenish the body’s minerals, thanks to their high potassium, magnesium, calcium and iron content. They provide important amounts of B vitamins and their level of vitamin C, an antioxidant and fatigue-fighter, is 5-8 mg per 100 g. As for lettuce, its fiber content varies according to the variety: Romaine is the highest, followed by frisée, iceberg and Boston.

This recipe is ideal for a lunch box. 

Variations

  • Replace the artichokes with sliced mango
  • Replace the artichokes with small broccoli florets 
Ingredients
Ingredients for each wrap
- 1 pita
- 1 thick slice of Chicken
- Marinated artichokes (sold in a jar)
- Lettuce
Vinaigrette for 155 ml (use 30 ml per wrap)
- 125 ml (1/2 cup) olive oil
- 1 tbsp. honey
- 1 tbsp. balsamic vinegar
Method
  1. In a bowl, combine the honey with a spoonful of balsamic vinegar; whisk in the olive oil.
  2. Wash the lettuce and dry it; tear it up coarsely; place it into a bowl with the dressing and toss well.
  3. Open up the pita; inside, place a slice of chicken, the coarsely chopped artichokes and the dressed lettuce; roll up. Enclose the wrap in plastic wrap so that it stays fresh.
