Chicken Skewers with Nectarine and Balsamic Vinegar

For 4 servings

- 4 chicken breasts
- 3 Tbsp. balsamic vinegar
- 2 Tbsp. olive oil
- Guérande fleur de sel
- Szechuan pepper
  1. Cut each chicken breast into cubes. Marinate in a bowl with the vinegar, olive oil, salt and pepper. Place in the fridge and leave to marinate for 1 hour.
  2. Preheat the oven to 220° C (440° F).
  3. Wash the nectarines well and cut into wedges around the pit.
  4. Once the chicken is marinated, prepare the skewers (2 per person) by alternating cubes of chicken and nectarine, placing them tightly together. Season generously with salt and pepper.
  5. Cook in the oven for about 20 minutes, turning halfway through, and basting with the remaining marinade. Serve hot with wild rice.
