Chicken Souvlaki Skewers

Chef's Note
Serve Greek-style on a bed of rice pilaf with garden vegetables that have been cooked on the grill in aluminum foil. The best side sauce is unquestionably tzatziki but you could also serve béarnaise.

- 500 g (18 oz.) chicken, cut into 4 cm (1 1/2") cubes
- 50 ml (3 tbsp.) lemon juice
- 1/4 tsp. ground cumin
- 1/2 tsp. fresh oregano or 1/4 tsp. dried
- 2 tsp. olive oil
- 1/4 tsp. freshly ground pepper
- 1 clove of garlic, minced
Method
  1. Combine the spices with the oil and lemon juice;
  2. Cut the chicken into cubes; combine with the marinade and let sit 5 minutes;
  3. assemble the skewers; grill for 5 minutes, turning only once after 3 minutes; when done, the cooking juices from the chicken should be clear or a meat thermometer should register 77 °C (170 °F).
