Chicken Stew with Olives

Ingredients
Ingredients for 4 servings
- 1 Chicken, 1.5 kg / 3 lb., cleaned and cut into pieces
- 300 g (10 oz.) green Olives
- 300 ml (1 1/4 cup) water
- 100 ml (6 tbsp.) olive oil
- 1 onion, thinly sliced
- 1 clove of garlic, peeled and crushed
- Juice of 1 lemon
- 1 tbsp. flour
- 1 tbsp. fresh mint
- 1/2 tbsp. ground ginger
- 1/2 tbsp. cumin
- 1/2 tbsp. mild chili
- Salt
Method
  1. In a large cocotte or Dutch oven, heat the oil; add the chicken, onion, garlic, ginger, chili and cumin; cover and cook over low heat for 15 minutes, stirring occasionally;
  2. blend the flour with a little cold water; add to the ingredients with the rest of the water; combine well and bring to a boil;
  3. cover and cook 45 minutes longer, stirring occasionally;
  4. add the olives, mint and lemon juice and let the flavors absorb for 15 minutes. Serve the chicken with the sauce.
