Chicken with Rum, Dominican-Style

Stay with the Caribbean theme by serving the chicken with white rice or fried plantains.

Ingredients
For 4-6 servings

- 12 boneless chicken breast halves
- Parsley
- Oil for frying

Marinade
- 250 ml (1 cup) dark rum
- 250 ml (1 cup) soy sauce
- 250 ml (1 cup) lime juice
- 2 tbsp. vegetable oil
- 1 tbsp. minced garlic
- 65 ml (1/4 cup) finely chopped onion
Method
  1. In a small saucepan, heat the rum and flambé it. Add the lime juice and soy sauce.
  2. Sauté the onion and garlic in oil. Combine all the ingredients to make the marinade, reserving a quarter of it to use as sauce.
  3. Place the chicken pieces in the marinade for 2-3 hours.
  4. Grill the breasts to brown them, then finish cooking in the oven.
  5. Baste on a little more marinade and sprinkle with chopped parsley just before serving.
