Chinese Vermicelli with Beef

Chef's Note
You could also make this dish with ground beef. Stir it to break it up as you cook it for 3 minutes.
Ingredients for 4 servings
- 1 package of rice vermicelli
- 300 g (10 oz.) Beef steak, cut into thin strips
- 1/2 tsp. chili paste
- 2 tbps. soy sauce
- 3 tbsp. nuoc mam (fish sauce)
- 2 tbsp. vegetable oil
- 1 small zucchini
- 2 tbsp. sesame oil
- 4 sprigs of cilantro
- 2 cloves of garlic
  1. Soak the vermicelli in warm water.
  2. Clean the green onions and chop finely.
  3. Cut the zucchini into small pieces.
  4. Peel the garlic; chop the garlic and cilantro.
  5. In a skillet or a wok, sear the meat quickly in a little oil.
  6. Add the green onions, zucchini, garlic and cilantro. Stir fry in the wok.
  7. Add the soy sauce, chili paste and nuoc mam. Mix well.
  8. Drain the noodles. Using scissors, cut into slightly smaller lengths and add to the meat.
  9. Mix well. Cook over low heat for 3 minutes.
  10. Drizzle with sesame oil, mix and serve immediately.
