Chocolate Temptations with a Hint of Lavender Recipe

Chef's Note
This recipe came to us, not from Provence, but from Bleu Lavande in Quebec's Eastern Townships, in the form of a big basket of lavender products. The owners have learned to turn their harvest into countless products: infusions, jellies, chocolates... This is where you can get lavender to add a ray of sunshine to your cooking.

- 200 g (7 oz.) dark Chocolate (at least 60% cocoa content)
- 200 ml (3/4 cup) milk
- 2 tbsp. Lavender flowers
- 1 tbsp. powdered sugar
- 2 egg yolks
- 5 egg whites
Method

In a small saucepan, bring the milk to a boil with the lavender flowers; remove from the heat and infuse to taste.

Strain the flavored milk, pressing well on the lavender flowers with the back of a spoon.

Chop the chocolate into pieces; melt in a double boiler with 6 tbsp. infused milk.

Off the heat, blend the egg yolks into the chocolate mixture and combine well.

Beat the egg whites to stiff peaks, adding the sugar during the final stage. Using a sptaula, gently fold the beaten whites into the chocolate mixture without deflating them.

Pour the chocolate mousse into small ramekins and refrigerate for at least 6 hours.

Serve with strawberries or other fresh fruit.
