Coconut and Banana Curry Recipe

- 4 tbsp. dried coconut
- 1 tsp. peanut oil
- 1 small onion, thinly sliced
- 1 clove of garlic, minced
- 1 tsp. Java Curry powder
- 2 tsp. sambal ulek
- 4 firm Bananas
- 250 ml (1 cup) thick Coconut Milk (or cream)
- A pinch of salt
- 2 tbsp. brown sugar
  1. Toast the coconut in a non-stick skillet until lightly browned; set aside; 
  2. heat the oil in a wok; sauté the onion until translucent; add the garlic, curry powder and sambal ulek; 
  3. peel the bananas and slice into 4 mm rounds; add to the wok; add the coconut milk, salt and sugar; 
  4. simmer for 5 minutes, stirring often but gently; 
  5. serve on a hot platter sprinkled with the toasted coconut.
