Chef's Note

An excellent way to prepare this citrus fruit. In Korea it is served for dessert instead of for breakfast.

For 4 servings

- Approximately 100 g (3 oz.) Ginger root
  1. Peel the ginger root; cut into thin rounds; cut each round into thin strips;
  2. bring 200 ml (3/4 cup) water to a boil; add the ginger; simmer over low heat for 5 minutes;
  3. drain the water from the saucepan and pour another 200 ml (3/4 cup) boiling water over the ginger; simmer another 5 minutes; add the sugar and continue simmering until the sugar is dissolved; reduce the heat and continue cooking until the water has completely evaporated, leaving only a thick syrup;
  4. cool;
  5. cut the grapefruits in half; detach each segment with a grapefruit spoon;
