Crispy Chicken Strips with Basil Sauce Recipe

Ingredients
For 4 servings
- 4 chicken breasts, cut into strips
- 100 g (3 1/2 oz.) bread crumbs (Tipiak or other breading)
- 150 g (5 oz.) arugula leaves
- 1 tbsp. Parmesan
- 2 eggs
- 2 tbsp. oil
- Salt and pepper
Basil sauce
- 1 hard-boiled egg
- 30 g (1 oz.) fresh basil
- 1 tbsp. grainy mustard
- 1 tbsp. fresh grated Parmesan
- 8 tbsp. olive oil
- Salt and pepper
Method
Basil sauce
- In a blender, combine the hard-boiled egg, basil, mustard and 1 tbsp. Parmesan.
- With the blender running, slowly pour in the 8 tbsp. olive oil to form a creamy sauce.
- Season with salt and pepper and set aside.
Preparing the chicken strips
- Beat the remaining eggs with some salt and pepper.
- In another bowl, combine the bread crumbs and the remaining Parmesan.
- Dip the chicken strips into the egg, then the bread crumb-Parmesan mixture.
- Heat the remaining olive oil in a skillet and cook the chicken strips on both sides.
- Serve with the basil sauce and some arugula leaves.
